Villa del Monte Chardonnay
Tomorrow, we will be blending our six barrels of 2010 Chardonnay Santa Cruz Mountains to get ready for bottling later this month. The wine has been in oak barrels since October and has completed malolactic fermentation and the fruit flavors have come through nicely. During malolactic fermentation or MLF, the malic acid (tart, unripe fruit flavor) is converted into lactic acid, which reduces the sharpness and imparts a lovely, soft, buttery flavor.
